docs: fix typos in documentation

Fixed typographical errors across documentation markdown files using codespell.

Looks like this spell-check is too aggressive: it's adding invalid syntax (hyphens) to variable names, changing hashes in the package-lock.json (see a few screenshots below), and changing the spelling of config options.

If you can fix the above issues and do an initial look through for any other problems, we're open to a spell-check PR. Let us know when you're ready for another look.

Please also revert changes to files in the dist/ and topojson/dist/ folders, since those files should be updated only at release time.
